What is a flat iron steak? How do you cook it?

 The top blade roast, which comes from the shoulder of the cow, can be cut into steaks, which are called top blade steaks or — ta da! — flat iron steaks.

They are among the more tender cuts of beef, and so are suitable for grilling, broiling, or pan-frying. Cut into smaller pieces, they are ideal for stir-frying, sautéing, or grilling on skewers.
