How to Use a Really Fresh Frozen Egg

Our chickens lay eggs and they freeze before we can pick them up. Are they still good to use?

They certainly have not spoiled, if that's what you're asking.

Eggs that freeze have yolks that become gummy. You probably will be a little disappointed if you use them to make fried or poached eggs. Your best options are to use them in all the baking projects you've been meaning to get to.

If any of the shells have cracked because of the freezing process, your government wants you to throw them out because of an increased danger they might have picked up contaminants.
