Toeing the Vegetarian Line with Cream of Carrot Soup

 I'm making Cream of Carrot Soup for some very strict (almost vegan) vegetarians. The recipe says I need chicken broth – what can I use instead?

There is vegetable stock for sale in your grocery store as well as vegetable stock bases, in liquid, cube, and powder form. They are also available online.

You can easily make your own vegetable stock if you have an hour or so and a few ingredients, and it will impress your friends mightily!
