 What is the shelf life of an opened can of cream of coconut and the proper way to store it? Thanks for this uncanny advice!

 Uncanny??? Boy, if one of our teenagers were around, you would never hear the end of it! You would be mocked and scorned – quite possibly wish you were never born. (That's why we tell them we're accountants and never let them read Ochef (not that they'd want to….)

Actually, you are on the right track – you should remove your leftovers from the can, which will otherwise impart an unpleasant taste to the cream of coconut.

Stored in the refrigerator, the cream of coconut will keep for a week; in the freezer, for a month.

Uncanny. Sheesh….
