Marinating & Roasting a Beef Tenderloin

To roast a beef tenderloin, how long on each side, and what do you marinate it in?

What flavors do you like? You can prepare a beef tenderloin very simply by just rubbing it with garlic and sprinkling it with pepper. Add a tablespoon of oil to the roasting pan on the stovetop and brown the meat on all sides. Then pop it into a 500F oven (260C), and roast for 25 to 35 minutes, turning it over every 8 to 10 minutes. For rare, the internal temperature should reach 130F (55C); for medium rare, 140F (60C).

As to marinades, there are thousands of recipes available. Check out the four choices in the Related Recipes section below — the first two are fairly mainstream, the other two are a little more exotic.
