Q. I’ve been buying extra-lean ground beef for a long while. Is ground turkey better or do you still have to watch that, too? I’m tired of skinless chicken breasts and want a hamburger!!!!

A. What do you want to hear from us? We are staunch advocates of Julia Child’s perspective on food: eat good food in moderation. If you want a hamburger, for heaven’s sake, have one. But if you’re going to, make it a good one. Don’t make a hyper-lean burger, over-grill it until it has the consistency of a hockey puck, and then feel guilty about eating it in the first place.

Ground beef that is 80% lean offers the best compromise between low fat and good taste. Extra-lean ground beef has between 8 and 10 grams of fat in a 3-ounce serving. Ground turkey has between 5 and 7.
