Q. Why do some recipes call for parboiling green beans before stir-frying while others do not?A. There are different approaches to stir-frying, but you’re usually working to get everything done at the same time. We suppose in some of the recipes you’ve come across, the beans are parboiled because the cooking time for the other ingredients is much quicker.
Often you parboil denser vegetables, such as carrots, rather than add liquid to the wok and increase the overall cooking time.
