Can potato salad be frozen?

Not very successfully. Mayonnaise tends to break down when it is frozen. You can substitute salad dressing for the mayonnaise (if you are the sort that doesn't mind the difference in taste.) But the larger problem is that cooked chunks of potatoes become soggy or gritty when frozen and thawed.
