Q. I have a cheesecake recipe that calls for a 9-inch springform cake tin. Can I cut the recipe in half and use a 6-inch tin?

A. In general you can, but be sure to cut the cooking time by a third to a half. That is, start checking to see if the cake is done when half the specified cooking time has elapsed, although it may take longer than half the time.
