Piloncillo is an unrefined brown sugar from Mexico. It is pressed into a cone shape - the name means little pylon. It is most commonly found in small cones (less than an ounce) or large (around 9 ounces). You can find it in Latin groceries, but on the odd chance you don't have the right number of piloncillo cones hanging around, you can substitute dark brown sugar.
