Q. Which is thicker — evaporated milk or half & half?

A. Evaporated milk is much thicker, having been relieved of about 60% of its moisture. Half & half, with 10% to 12% butterfat, is scarcely thicker than whole milk. Evaporated milk is closer to the thickness of whipping cream than it is to half & half.
