Q. Where do I find pomegranate molasses?

A. In Persia. Also in our cupboard, where it came to us by way of Persia, the modern-day Iran. The syrup, which is simple a concentration of pomegranate juice, is available online at and should be available in most all Middle Eastern markets. Like the fruit, pomegranate molasses is tart and only slightly sweet.

Pomegranates, which are thought to have originated in Persia, are now cultivated in many areas in Asia, around the Mediterranean, and in California.
