Comments: Oh my gosh – you never knew there were so many people who love the middle brownie until you get a brownie pan that makes only edges! Then they're crawling out of the woodwork. If you like/love/swoon over edges, though, this pan is for you.

In a regular brownie pan, the corners each produce brownies with two edges, every other edge piece has one edge, and brownies in the middle have no edges at all. In the Edge Brownie Pan, every piece has two edges, except for the ends, which have three!

The pan is sized to fit boxed brownie mixes and every recipe that cooks in a 9-inch by 9-inch pan or a 9-inch by 13-inch pan, as well as bar cookies, breads, cobblers, etc. The manufacturers say a batter that cooks for 20 to 30 minutes or less in a conventional pan will take about the same amount of time in the Edge Brownie Pan. Recipes that take 40 minutes or longer will likely take a little less. Our impression is that with so much edge, it is a bit easier to overbake the brownies, so watch carefully, especially the first few times you use the pan, and especially, especially if you have a convection oven. The benefit, though, is that when the edges are done, everything is done – unlike so many batches where the edges are done and the middle is still soupy.

The nonstick surface performs as promised, although it keeps you from using the dishwasher (if you are the type to follow the manufacturer's advice). It comes with its own little spatula, which is also an effort to keep you from using metal utensils. We made our favorite brownie recipe a couple of times and a boxed mix!!!! once (we were scared to bits, but it was a Ghirardelli mix and was delicious!) We were totally happy with each batch – except for the pesky people who now claim a lifelong aversion to edges..., um, we mean, except for our very attractive friends who now claim a lifelong aversion to edges..
