Comments: In the competition to produce a pan with the most layers, Chantal must be firmly in the running, with six – copper at the core, fused to carbon steel on either side, a base enamel on either side of that, and another layer of enamel lining the inside of the pan. The result is an essentially non-stick pan that heats quickly and evenly with no hot spots.
With the tempered glass lid in place, it functions as a Dutch oven, allowing for slow, moist cooking. Because of the enamel coating, it provides a stick-resistant surface without the need for any chemical or nonstick coating; it also prevents any metallic transfer or interaction with the food. Because it will not
react, you can store leftovers in the pan. The generous size holds prodigious amounts of food. The stainless steel handles are attached without rivets, and so do not protrude into the pan. The flat bottom is designed to work on all stove tops, including induction.
