Mr. Moore's Baked Macaroni & Cheese

When mom is sick or out of town, we always ask dad to make his mac & cheese! This is the way our grandma taught him to make it. It has two different types of cheese.
2 cups elbow macaroni
1/2 cup margarine
2 teaspoons onion, chopped fine (that means in really small pieces)
1/2 teaspoon salt (use part garlic salt, if you have it)
1/2 teaspoon dry mustard
1/4 cup flour
1/4 teaspoon paprika
2 cups milk
1-1/2 cups shredded cheddar or American cheese
1/4 cup grated parmesan cheese
Preheat the oven to 375°F (190°C).
Boil the macaroni according to the directions. Make sure it doesn't get too soft. Drain it and set it aside.
Melt the margarine in a large saucepan over low heat. Then sauté the onion. Stir in the salt, dry mustard, flour, and paprika. Slowly stir in the milk and cook until it thickens. Add the cheese and stir until melted.
Combine the cheese sauce and macaroni in a casserole dish (ask an adult to help you with this). Add a sliced tomato (optional). Then sprinkle more cheese on top if you want to. Bake it for 30 to 35 minutes.
