Crispy Walnut Cookies
From Honey: A Connoisseur's Guide with Recipes, by Gene Opton

Here is a basic formula for crisp cookies, not very sweet, and easy to make.

Ingredients:

1 cup whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup unsalted butter, melted
3/8 cup honey
1/2 teaspoon vanilla extract
1 egg
1 cup chopped walnuts or other nuts

Instructions:

Sift flour, soda, and salt together into a mixing bowl. Combine the butter, honey, and vanilla and stir into the flour mixture. Preheat the oven to 375F (190C). Add the egg, mix into the batter, and stir in the walnuts.

Drop by the teaspoonful on an ungreased baking sheet. Bake about 10 minutes, until lightly browned. Transfer to racks to cool.

Yield: About 3 dozen cookies
