Chocolate Oatmeal Cookies
Ingredients: 2-1/2 cups whole-wheat pastry flour
Instructions: Soften butter in a large mixing bowl in a warm place. Add honey in a fine stream, beating constantly. Beat in the melted chocolate and the eggs. In another bowl, sift the flour together with the cinnamon, baking powder, and pinch of salt, if desired. Stir in the oatmeal and nuts. Combine with the honey mixture, stirring until well blended. Drop by rounded teaspoonfuls onto an ungreased cookie sheet. Bake at 325°F (160°C) for about 15 minutes. Yield: Makes 3 dozen cookies if you can refrain from eating the dough! |
