Simple Pljeskavica (Serbian or Otherwise)

Instead of using pork and veal, you can also use lamb. You can experiment with the addition of garlic, paprika, thyme, or rosemary. This dish is traditionally served with djuveč rice, French fries, or onion rings, and a Riesling wine.


10 oz (300g) pork
10 oz (300g) veal
2 onions
1 green pepper (seeds removed and chopped very fine)
1 tsp salt
1/2 tsp pepper
Oil (for frying, optional)


Put the meat through a grinder. Add the salt, pepper, finely chopped onion and finely chopped green pepper. Grind this mass again. Put in the refrigerator for at least two hours.

For the mixture into hamburgers and return them to the refrigerator overnight, covered with foil. Grill or pan-fry the pljeskavica on both sides until cooked thoroughly.

Yield: Serves 4
