Barbecue Baby Back Ribs
From Supper at Richard's Place: Recipes from the New Southern Table, by Richard Jones


For the Ribs:

4 slabs of baby back ribs
3 Tbsp paprika
1-1/2 Tbsp light brown sugar
2-1/4 tsp kosher salt
2 tsp chili powder
1-1/4 tsp ground cumin
1/4 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder

For the Barbecue Sauce:

3 cups ketchup
1 cup apple juice
1/4 cup Worcestershire sauce
2 Tbsp brown sugar
2 Tbsp cider vinegar
3 Tbsp yellow mustard
1 tsp ground black pepper
1 Tbsp white vinegar


In a small bowl, combine paprika, light brown sugar, salt, chili powder, ground cumin, cayenne pepper, garlic powder, and onion powder. Mix well. Season ribs on both sides with spice mixture. Cover ribs and bake at 300F (150C) for 1 hour and 15 minutes.

Immediately after placing ribs in oven, begin preparing the barbecue sauce. In a medium pot on low heat, combine remaining ingredients to create the sauce. Allow sauce to simmer for 1 hour. Uncover ribs after cooking for the allotted time and baste both sides with barbecue sauce. Cook ribs an additional 45 minutes.

Yield: Makes 4 servings.
