Blender Hollandaise Sauce

This is easier than making Hollandaise Sauce by hand, but produces a sauce that is less flavorful, less fluffy, and paler in color.


1 cup butter
4 egg yolks
1/4 teaspoon salt
dash cayenne pepper
2 tablespoons lemon juice


Heat butter just to bubbling. Meanwhile place other ingredients in electric blender. Cover, turn blender on high. Remove cover immediately and add hot butter in steady stream. May be stored, covered, in the refrigerator.
