Riz Egyptienne [Rice With Chicken Livers]

1. Cut the liver in quarter-inch pieces. Set aside.

2. Heat one tablespoon of the butter and add the onion and mushrooms. Cook, stirring occasionally, until wilted. Add the rice and cook, stirring, until rice is coated. Add the broth and bring to the boil. Cover closely and cook 17 minutes.

3. Meanwhile, heat the remaining butter in a skillet and add the livers and ham. Cook, shaking the skillet and stirring until liver is cooked and ham is heated through.

4. Add the liver and ham to the rice and toss gently with a two-pronged fork to blend the ingredients.
