They’re quite similar. Savory is an herb, closely related to mint. The leaves are small, narrow, and gray-green in color. Both are full-flavored and should be used judiciously, but winter savory is the stronger of the two, with a pungent, bitter flavor, not unlike thyme and rosemary. Summer savory is simply milder. Both are available dried and fresh.
