There’s really no good way to store a piece of tomato – whole tomatoes are among the most perishable of vegetables. Cutting into it breaks down its cell walls and just speeds up the spoiling process. The natural inclination when you have anything leftover is to pop it into the refrigerator, but that just adds insult to injury; you never want to store a tomato in the refrigerator; the cold makes the flesh pulpy and harms the flavor.
