Heirloom One-Bite Butter Biscuits

Spray 3 mini-muffin pans (1-3/4 inch) with cooking spray.

In a food processor, place the flour on the bottom of the bowl and the frozen butter pieces on top. Pulse the flour and butter 12 times. Add the sour cream and light cream and pulse 6 times more, keeping the butter in little pea-sized pieces.

Preheat oven to 400°F (205°C). With floured hands, quickly roll the sticky dough into walnut-sized balls. Place the balls into the prepared muffin pans and bake for 11 to 12 minutes.

Remove the biscuits and roll half of the batch in the melted butter, then roll in 1/2 cup of the sugar. Add the cinnamon and nutmeg to the remaining sugar and roll the remaining biscuits in the cinnamon mixture. Serve.
